Jalifa Amontillado

Bottle of Jalifa Amontillado

Jalifa traces its origins to Bodegas Antonio Pérez Megía, founded in Sanlúcar de Barrameda in 1821. It was a VORS Amontillado originally made from the manzanillas pasadas of this historic winery.

Bottle and box of Jalifa Amontillado VORS

Wine type: Amontillado, fortified wine (Vino Generoso) from D.O. Jerez – Xérès – Sherry

Winemaking: Williams & Humbert selects from its soleras of old finos and from vintages under biological ageing as they evolve towards oxidative ageing. This selection is used to refresh the soleras of Jalifa. An Amontillado that begins its oxidation naturally and ages for 30 years through the dynamic Criaderas y Soleras system.

Age: minimum average of 30 years (VORS).

Grape variety: Palomino.

Vineyards: Pago Balbaína. Jerez Superior.

Alcohol: 20% ABV.

Profile: Dry.

TASTING NOTE: Old gold to amber in colour, very bright. A very pungent, intense and complex nose with subtle hints of the fino it once was, along with nuts and hazelnut. Dry, with balanced acidity, full-bodied and characterful; very elegant and persistent on the palate, and remarkably expressive on the retronasal finish.

PAIR IT WITH: Ideal as an aperitif with good cheese, ham or nuts. It pairs perfectly with baked fish, shellfish, smoked foods and bluefin tuna, as well as mushrooms, truffles, game, spiced dishes, artichokes, asparagus and salads.

Serve it: between 12 °C and 14 °C.
