This wine joins the rest of the Don Zoilo range: Fino, Amontillado, Oloroso and Pedro Ximénez.
A new Palo Cortado joins the Williams & Humbert sherry range. This new wine becomes part of the Don Zoilo collection, made up of Fino, Amontillado, Oloroso and Pedro Ximénez – a range of sherries aged for at least 12 years, except for the Fino, with an average age of 9 years.
Don Zoilo Palo Cortado is made from free-run must from Palomino grapes grown in our finest pagos, Añina and Carrascal, in the Jerez Superior area.
After alcoholic fermentation of the must at controlled temperature and subsequent classification by finesse, it is fortified to 15% with the finest wine spirits. These are the first steps to obtain the traditional sobretablas that will enter our biological ageing soleras. Occasionally, during this ageing process, some casks do not develop in the direction expected for these finos. These are the casks that are fortified with one or two jars of spirit and form the base of these Palo Cortado soleras, which after careful selection in the bodega age for at least 12 years in American oak casks.
This is how Don Zoilo Palo Cortado (19.5% ABV) is born: old gold in colour, with a very pungent, intense and complex nose reminiscent of nuts and hazelnuts. On the palate it is dry and silky, with balanced acidity. Full-bodied and characterful, it is very persistent with a remarkably expressive retronasal finish.
