Finolis: a statically aged biological wine made from overripe Palomino grapes

Bottle of Finolis

Bodega Williams & Humbert launches Finolis, a still wine under biological ageing from the 2016 vintage (June 2021 saca).

What makes this wine special is that it is made from overripe Palomino grapes from the old vines of Viña Dos Mercedes, in the Pago de Carrascal. Overripening, first on the vine and then by sun-drying, means the grapes naturally reach more than 14% potential alcohol.

Bunches of Palomino grapes on the vine

Once destemmed, the Palomino grapes are pressed in a vertical press, giving a must yield of around 50%. The must ferments in casks and reaches 14.68% without any fortification.

After fermentation in cask and racking, it is aged statically. The fermented wine goes into 600-litre casks filled to 80% of their capacity, encouraging the spontaneous formation of flor and biological ageing.

This still wine is pale gold in colour, with a pungent nose and spicy floral notes. On the palate it is dry, very fresh and mineral.

It is a very special wine because of its particular winemaking process: from Palomino grapes from old vines that overripen naturally – first on the vine and then in the sun – to hand pressing, fermentation in cask and static ageing under a veil of flor. All this makes Finolis a different and very special wine. A limited edition.
