Eleven in the Sun

A naturally sweet sun-dried wine made from organic Pedro Ximénez grapes from the Pago de Carrascal.

This still, unfortified wine is the result of Williams & Humbert’s innovation project with organic Pedro Ximénez grapes in the Sherry Triangle.

Made from the 2024 harvest, this wine comes from organic Pedro Ximénez grapes, picked when they reach 13° Baumé. They then undergo a sun-drying process for a period of 7 to 10 days, with the aim of concentrating their sugars to reach between 16 and 17° Baumé.

Once the optimal balance between sweetness and acidity has been achieved, the sun-drying is brought to an end, resulting in partially raisined grapes. The grapes are then taken to the winemaking press house, where they undergo crushing to obtain the must.

The must is then cooled before being transferred to Bodegas Williams & Humbert, where alcoholic fermentation begins at a controlled temperature of 17°C. During this process, cold stops are carried out to encourage racking and preserve the wine’s aromatic quality.

The result is a still wine with an alcohol content of 11% vol. and a residual sugar content of 105 g/l, characteristics that give it a perfect balance between sweetness, freshness and varietal expression.

It has an intense golden colour with amber highlights and great brilliance. On the nose, aromas of ripe exotic fruits, such as mango and pineapple, stand out, accompanied by citrus notes reminiscent of apricot, on a delicate background of honey and white flowers. On the palate it is sweet and enveloping, yet perfectly balanced thanks to a vibrant acidity that brings freshness. Its texture is unctuous and its finish long and persistent, with subtle hints of bakery and spices.

Thanks to its gastronomic versatility, it is an excellent choice to accompany blue cheeses, foie gras or Asian-inspired dishes such as lacquered duck. It also pairs perfectly with fruit tarts and oriental pastries. It is recommended to serve between 8 and 12°C to fully enjoy all its aromatic and flavour qualities.
