Calle San Francisco de Paula, 2, 11401 Jerez de la Frontera, Cádiz
Housed in a historic winery building constructed in 1898, which once served as a storehouse for Sherry wines, La Carboná stands today as a gastronomic landmark in the city of Jerez.
A family-run restaurant that began 23 years ago specializing in grilled meats—hence its name, inspired by the traditional ‘carboná’ charcoal grills of Cantabria. Javier Muñoz and Ana Soto, together with their son and head chef, Javier Muñoz Soto, continue to offer those exceptional meats alongside many other culinary proposals where Sherry wine is ever-present, both in the preparation of the dishes and in the pairings. It is not for nothing that Javier Muñoz is known as “The Sherry Chef.” This is a cuisine focused on the quality of the product, to be savored within this evocative space of wine casks and wooden beams.

In this magnificent setting, Williams & Humbert took part in the gastronomic proposal created by Casilda Gurrucharri, from the Basque Culinary Center, and prepared by chef Javier Muñoz. The menu featured various representative dishes of Andalusian and Spanish cuisine alongside interpretations of international favorites such as the Taco al Pastor or the famous Fish & Chips.
