Launched in the 1960s, the Don Zoilo range comprises Fino, Amontillado, Palo Cortado, Oloroso and Pedro Ximénez. All these sherries have an average age of 15 years, except the Fino, with a minimum age of 8 years. The range is made using the dynamic Criaderas y Soleras system. The result is exceptional wines that keep their quality year after year.

Wine type: Fortified wine (Vino Generoso) from the D.O. Jerez – Xérès – Sherry. Biological ageing.
Winemaking: After selecting first free-run must from our best pagos, it undergoes cold static settling, fermentation at 22 °C and early racking. Then, after classification by finesse, it is fortified to 15% with the finest wine spirits to obtain the traditional sobretablas, which enter the classic dynamic Jerez system of Criaderas y Soleras. As it moves through the criaderas, it undergoes biological ageing under a veil of flor in traditional American oak casks for an average of at least 10 years, until it reaches the solera, from which the “saca” is drawn for bottling.
