New vintages

New vintages from the Williams & Humbert Collection

The 2015 Organic Oloroso and the Vintage Finos 2017 from the Carrascal and Añina pagos join other new vintages released by Williams & Humbert as part of its Collection: Fino 2015, Amontillado 2011 “Crujía”, Fino 2012 “Alboreá” and the still wine Pedro Ximénez Vintage 2018.

The Williams & Humbert vintage collection dates back to 1920, with the Single Cask vintages, and the new vintages first produced in 2001, the year the winery began experimenting with static biological ageing, launching the first Vintage Fino of the Jerez region: Fino 2006.

Unlike traditional sherries, aged through the dynamic Criaderas y Soleras system, these wines age statically. They are made from musts from old vines in the Añina and/or Carrascal pagos, fortified to 15% for biological ageing or to 18% for oxidative ageing. The wines are monitored throughout their ageing, with no intervention until they are selected for bottling. Unlike the uniformity provided by the Criaderas y Soleras system, in which wines of different ages are methodically blended, each of these wines is unique and special – a reflection of that year’s harvest and its particular weather, as well as of each wine’s individual evolution during static ageing.
