Williams & Humbert’s 2015 Organic Oloroso was part of the Grana Padano pairing tasting held at Madrid Fusión and led by Federico Oldenburg, a leading figure in the world of gastronomy.
THE SURPRISING HARMONY
Grana Padano is a Protected Designation of Origin cheese made by artisan methods and a benchmark not only in Italian gastronomy: it is the most widely consumed cheese in the world. With a thousand-year tradition, it had its own stand at Madrid Fusión, where one of the highlights was a tasting of its three maturities with different types of wine. Each pairing revealed the cheese’s versatility. The 2015 Organic Oloroso closed the tasting with what was dubbed the “Surprising Harmony”: “the meeting of a cheese and a wine of enormous character, giving rise to a fascinating play of contrasts”. For this pairing, the 2015 Organic Oloroso accompanied a 27-month Grana Padano Riserva, with an intense, even straw colour and a markedly grainy texture.
For Federico Oldenburg, the Williams Organic Oloroso “is an absolute rarity, as it is unusual to find wines in the Jerez region from a single vintage (with static ageing), bottled en rama (straight from the cask) and, even more so, organic”. For this food expert, “it is a dry Oloroso with a very fine profile, not at all heavy, yet with enough character and persistence to balance the intensity of this cheese and enhance the pleasure of tasting them together”.
