Under this motto, Revolutionaries, the XXIII edition of Madrid Fusión was held. A renowned tribute to a generation that revolutionized and continues to revolutionize cuisine. A tribute to the chefs who grew up in the currents opened by the culinary revolution sparked at least 30 years ago in Spain. This edition, the most international, broke attendance records and featured the largest presence of chefs in its 23-year history. It also served as a showcase for new revolutions underway, such as the one Sherry wine has been experiencing for years, known as the Sherry Revolution. This is why the wines from the Sherry region could not miss this Madrid Fusión event, also joining this culinary revolution, thanks to which the most prestigious chefs and sommeliers consider sherry an excellent option when pairing their creations. Because there is no doubt that sherry has gained greater recognition and prominence in the gastronomic field in recent times.


Williams & Humbert wines did not want to miss this appointment with Madrid Fusión, and their sherries were part of tastings and pairing proposals in the showcookings held at this important event, such as the choice of our Don Zoilo Amontillado to accompany the “Hamburdehesa” style with Ybarra Sauces or Fino Pando as the perfect complement for Casa Santoña’s Pincho.
The variety and versatility of Sherry wines are also evident in mixology, making them an ideal ingredient for the most attractive and innovative proposals. On the stage of this important international event, Joaquín Manrique and Néstor Mato, from the Devil’s Cut team, prepared their special and unique welcome cocktail for all those who visited the Williams & Humbert space at Madrid Fusión.

The cocktail they offer their customers every day, after ‘venenciando’ it at the entrance of this emblematic establishment located at Calle León 3 in Madrid. Devil’s Cut is the European project of Shingo Gokan, a global icon of mixology, considered one of the most influential people in the industry worldwide and responsible for twelve bars in relevant cities such as Tokyo, Shanghai, and New York. Gokan discovered Sherry wines at a young age and has worked with them in creating innovative cocktails, showcasing a unique and singular style that incorporates the use of the ‘venencia’.
