Launched in the 1960s, the Don Zoilo range consists of Fino, Amontillado, Palo Cortado, Oloroso, and Pedro Ximénez. All these sherries have an average age of 15 years, with the exception of Fino, whose minimum age is 10 years. This range of age-indicated sherries, bottled ‘en rama’, is produced using the dynamic Criaderas and Soleras system. The result is exceptional wines that maintain their quality year after year.





With a refreshed image, the new presentation of the Don Zoilo range reflects the unique essence of this emblematic brand. The new bottle now features changes to its neck and greater prominence in the shoulders. In addition, the legendary Bodegas logo, the Sherry Girl, now plays a more prominent role. As for the new label, its new format opts for higher quality and grammage paper, with embossed details adorning its surface.
DON ZOILO FINO

Don Zoilo Fino en Rama is the result of biological aging under a veil of flor in traditional American oak butts for a minimum average of 10 years through the Criaderas and Soleras system. Made with ‘mosto yema’ (first-press must) from Palomino grapes from the Añina and Carrascal vineyards, it is a very bright old gold colored wine. Very pungent, intense, and complex aroma, reminiscent of the flor veil, with notes of toasted almond. Very dry, fresh, with great body and character. Elegant on the palate, unctuous, with great retro-nasal persistence. A tremendously expressive wine
This very old Fino is ideal for accompanying appetizers such as nuts, olives, salted fish, marinated foods, and pickles, as well as Iberian ham and cured meats. It pairs perfectly with salads and dressings, seafood, baked or salt-crusted fish, fried fish, rice dishes and seafood stews, and also as an accompaniment to white meats.
DON ZOILO AMONTILLADO

Don Zoilo Amontillado en Rama is the result of biological aging under a veil of flor in traditional American oak butts for a minimum average of 8 years. Subsequently, and naturally, its oxidative aging begins for a minimum average of 7 years. Made with ‘mosto yema’ from Palomino grapes from the Añina and Carrascal vineyards, it is a very bright amber-colored wine. With a very pungent, intense, and complex aroma, with slight hints of the flor and the Fino it once was, of nuts and hazelnuts. Dry, with just the right acidity, with great body and character. Elegant and persistent on the palate and tremendously expressive on the nose.
It is an excellent wine to accompany appetizers such as aged cheese or nuts. An ideal wine to pair with dishes such as baked fish, seafood, grilled and smoked foods, fresh tuna, broths and consommé, mushrooms, game meats, spicy dishes, artichokes, and asparagus.
DON ZOILO PALO CORTADO

For the production of Don Zoilo Palo Cortado en Rama, Williams & Humbert selects soleras that stand out for their finesse, as well as their vintages, with which they refresh their Palo Cortado soleras, a wine that ages for a minimum of 15 years through the Criaderas and Soleras system. An old gold colored wine with a very pungent, intense, and complex aroma, with slight notes of nuts and hazelnut. On the palate, it is dry, silky, with a very balanced acidity, with great body and character, elegant and persistent, and a tremendously expressive retro-nasal finish.
Don Zoilo Palo Cortado is the perfect combination to enjoy with appetizers such as nuts, cured meats, and aged and semi-hard cheeses. An ideal wine to pair with fresh tuna, game meats, red meats, stews, spicy and oriental dishes, mushrooms, and truffles.
DON ZOILO OLOROSO

Made with ‘mosto yema’ from the Palomino variety from the Añina and Carrascal vineyards, Don Zoilo Oloroso is the result of aging and oxidative maturation for a minimum average of 15 years through the Criaderas and Soleras system. Don Zoilo Oloroso en Rama is a bright amber-colored wine, with a very intense aroma with hints of nuts and walnuts. On the palate, it is dry, low in acidity, full-bodied, with velvety tannins. Full and harmonious on the palate and a very persistent retro-nasal finish.
It is an excellent option as an appetizer with old cheese, nuts, blue cheese, semi-hard cheese, foie gras, and to accompany dishes such as tuna, red meats, game meat, stews, and spicy dishes.
DON ZOILO PEDRO XIMÉNEZ

After sun-drying the Pedro Ximénez grapes and special pressing, these musts are immediately fortified to 9°, for subsequent decanting and racking, after the first cold spells. Subsequently, a new fortification is carried out, reaching 18°, then entering the Criaderas and Soleras system for physical-chemical aging, by oxidation, for a minimum of 15 years.
Don Zoilo Pedro Ximénez en Rama is a mahogany black wine with characteristic Pedro Ximénez grape aromas of raisins and figs. On the palate, it is low in acidity, very sweet, and persistent.
An ideal sherry to consume with desserts and sweets, such as ice cream, citrus fruits, red berries, and dark chocolate, and as an accompaniment to blue cheeses.
