ORGANIC OLOROSO EN RAMA FROM THE 2015 HARVEST

July 2022 saca

Bottle of 2015 Organic Oloroso en Rama

An Oloroso made from organic Palomino grapes grown in the Burujena pago and fortified with organic spirit.

From the 2015 harvest and bottled en rama, this new Oloroso has been aged statically by the winery’s winemaker, Paola Medina.

WINEMAKING

Unlike traditional sherries, this Organic Oloroso is not aged in the Criaderas y Soleras system; it is a statically aged wine. Unlike the uniformity provided by the dynamic Criaderas y Soleras system, in which wines of different ages are methodically blended, each of these statically aged wines is unique and special, a reflection of that year’s harvest and its particular weather.

For this Organic Oloroso, Williams & Humbert selected organic Palomino grapes from the 2015 harvest, from the Pago de Burujena in Trebujena. These grapes were subjected to more pressure in the destemmers and presses than traditional free-run must. After fermentation at 22 °C, the must was fortified to 17.5% with organic spirit.

This Oloroso is the result of 7 years of static ageing in 600-litre American oak casks.

CHARACTERISTICS

The 2015 Organic Oloroso en rama (18.5% ABV) comes from the July 2022 saca and its production is limited (1,000 bottles of 0.5 litres).

It is a very fresh, floral wine with structure and minerality. Amber in colour, with aromas of overripe fruit and caramelised nuts. On the palate it is dry with a very balanced structure.
